  Colourful empanadas.

 

My Monkey loves these! She ate so many, just because it was funny for her to eat "funny faces." Kids, right?!

Cheese, ham, beetroot, corn, flour, and butter are the main ingredients.

Blending the beetroot and corn, and then making a simple bread dough with them, is the first step.

I really love the beetroot dough—it looks so beautiful!

From here, it's easy. Just make two round shapes, even combining the colours. One should be a colour on top, and the other one a different colour.

A bit of butter, a lot of cheese (my Monkey loves cheese), and ham go on the first shape. Gently add a few drops of water to the edges—it helps the process.

Now place the second round on top, trying to align it perfectly with the first one.

With a little spoon, you can press them "together forever," and those drops of water will work their magic.

Now comes the fun part. Using your imagination, you can create any face you want.

I made a lot of "funny" faces, and I made one grumpy, telling my Monkey that it was me!

She thought the grumpy face was the funniest one! Imagine that!

After making the "funny" faces, I "painted" them with a bit of magic—just egg yolk mixed with milk.

It's that simple!

Place them all neatly on a tray and into the oven they go!

Just a few minutes, about 20, but it depends on your oven.

If you're a mom and you cook daily, you’ll know when they’re done!

I never recommend following a recipe 100%. We don’t all use the same products, and we don’t have the same ovens. But if you cook often, you’ll be just fine.

Nothing complicated at all!
