Corn Balls with cheese

This beautiful, colourful dish is so easy and so yummy! But, I’m afraid my Monkey didn’t like it that much.

I did!! I enjoyed wonderful breakfasts for a few days. With a coffee, it was perfect! I need to cook it more often.

Even though she didn’t like it, she tried it, so I was happy about that. It used to be very hard to convince her to try new things. Now she will, so that’s progress, even if she doesn’t like it too much.

As I said, it’s very easy to make and only needs a few ingredients: corn flour, cheese, water, a bit of oil or butter, an egg (though you can skip the egg), and some seeds on top.

Start by boiling water with salt and a bit of oil or butter in a small pot.

Once it’s boiling, carefully add the flour. Be careful because the corn mixture can splatter and might burn you.

After taking it off the heat, mix it very well. When it cools down a bit, add cheese, and maybe a bit more butter, and there you have it! It will chill quickly, and then you can form it into beautiful little balls, or whatever size you want.

I added some egg and put them in the oven for a few minutes. Without the egg, you don’t need the oven—just a bit of butter and the seeds on top.

I used chia seeds, sesame seeds, and a small piece of cheese on top of some before putting them in the oven.

And that’s it!

They’re very good! They go perfectly with tea or coffee, even if your kids don’t like them as much as mine.
