I don’t know about other kids, but my Monkey would never touch avocado. I thought of using things she likes to hide the ones she doesn’t. Using avocado with chocolate cream, in general, seems like a fantastic idea.
The only thing is to "smash" the avocado very well—so well that she won’t feel it. And, as with all the doughs I’m cooking, I have to blend and strain all the vegetables. God forbid there’s even a little bit left—she’ll feel it immediately, and everything will be "yucky."
Therefore, my main concern for this mousse was blending the avocado very well. The rest is very, very easy.
Just use the chocolate you want and a spoon of butter. Melt them, either in the microwave or place them on top of a boiling pot of water. If you have too little butter, it might seem too thick, so add a little more, but don’t make it too liquid. Mix the melted chocolate and butter well, and you’ll get a very nice, creamy consistency.
Separately, take the double cream and mix it VERY, VERY well until it becomes creamy.
The idea is to mix both together, but the chocolate CAN’T be warm. Start with the chocolate-butter mixture, let it chill, and then work on the double cream and avocado.
AVOCADO...right! Let’s get to that. Cut it in half, discard the dark parts, scoop out the green, oily flesh, and press it very well—but you’re not done yet. Pass it through a strainer. Press gently with a spoon, and you’ll see how perfectly smooth it becomes—no small pieces, nothing.
I mixed the cream, then added the avocado. The colour was so beautiful...really wonderful! Then I added the chilled chocolate-butter mixture and mixed a bit more.
And that’s all! It’s done!
I must be very careful how I present things to my Monkey, so I always try to make it funny, nice, and colourful. I used a chocolate mould for this mousse, and it looked great.
She ate it all. I had to set some limits because she wanted to eat it all simultaneously! Now I know it will work for other mousse, and I have a long list of mousse ideas coming soon.
